Several years ago I wanted to cut down on the carbs that we eat. While researching recipes online I came across someone who absolutely loved their julienne peeler (which I had never heard of). If someone cared that much about a product, I decided that I would have to try it. So I found it at Bed, Bath and Beyond but you can order one on Amazon. It is fantastic. I was not a lover of zucchini but I became one with this product. It slices up like spaghetti. Once you have sliced up your zucchini, coat with olive oil, sprinkle with your favorite seasonings (I use a rub for fish that I got at Costco which is wonderful) and bake in your oven at 375 degrees for 10 to 15 minutes.
