Thursday: Garden Burgers & Roasted Rosemary Butternut Squash (if you have never had butternut squash, it is fantastic)
Friday: Barbecue Pork Cups (recipe below)
Saturday: Quiche and Waffles
Sunday: Eating out!
This has become one of my husband's favorite meals. It is also a fantastic stockpile recipe, using many ingredients that have been recently super cheap or free. For those of you who don't have much time, it is also quick to make.
Barbecue Pork Cups
Ingredients:
1 lb ground pork
1 bottle barbecue sauce
1 onion, chopped
various other chopped vegetables of choice, i.e. bell pepper, zucchini (optional)
1 can refrigerator biscuits (at least 8 count, can make up to 12)
3/4 c. grated Cheddar cheese
Directions:
Brown pork and vegetables together. Add barbecue sauce and cook until heated through. Roll out biscuits using rolling pin and press into greased muffin pan to form cups. Spoon mixture into the cups and top with grated cheese. Bake at 400 degrees for 10-12 minutes.

I do something very similar to this with ground beef, potatoes o'brian, and cheese, with BBQ sauce and cheese, then I fold them into a croissant (instead of the biscuit)...How nice to try a little something new! :)
