Menu Planning Monday: Ate Too Much at Thanksgiving Edition!


Monday: Clean the Pantry Frittata
Tuesday: Sausage Potato Soup (recipe below)
Wednesday: Spinach Turkey Meatloaf (surprisingly really good!)
Thursday: (Club Meeting) 40 Clove Garlic Chicken (crockpot) & Steamed Vegetables
Friday: Pasta e Fagioli
Saturday: Tuna Muffins (recipe below) and Vegetables
Sunday: Boston Baked Beans (crockpot)

Potato Soup

Ingredients:
6 cups of 100% fatfree chicken broth
1 bag frozen Ore-Ida O'Brian potatoes
1 package country gravy (fat free)
Salt and pepper to taste
Diced sausage (optional)

Directions:
Heat broth, potatoes, salt and pepper. When heated through, add gravy packet and stir with a wisk until combined. Simmer until potatoes are cooked. Quick and easy to make.

You can add cooked sausage (recommended for husbands)!

Tuna or Salmon Muffins

Ingredients:
Three 6 ounce cans tuna or salmon, well-drained
3 eggs
1 stalk celery, chopped fine
1/2 medium green pepper, chopped fine, 2 1/4 ounces
3 tablespoons onion, chopped fine, 2 ounces
1/4 teaspoon Old Bay seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
6 ounces cheddar cheese, shredded

Directions:
Mix all ingredients and spoon into 12 well-greased muffin cups. Bake at 350º for 30 minutes until puffed, set and lightly browned around the edges.

Serve with:

CHIPOTLE MAYO
1/4 cup mayonnaise
1/8 teaspoon garlic powder
1 teaspoon chipotle chile powder
Dash pepper

Mix all ingredients and chill. Makes about 1/4 cup.
