Pantry Challenge Monthly Totals


I had planned on only spending $80 for the month for the Eat from the Pantry Challenge, but the Kroger Mega Deal sale was just too much temptation! Overall the month went well. We used up a good chunk of our freezer and stockpile, and we were able to replace some key ingredients in the stockpile with the great sales.

Publix Trips

We are big coffee drinkers in our house. If there is one thing that we run out of regularly, it's coffee. So even though I hadn't planned on making a trip to Publix this week, I changed my mind when I found out that coffee was the penny item. Even my husband decided to make a trip on the way home! Of course he had no coupons and needed to get his total to ten dollars to get the penny item so I told him to pick up a couple of Green Advantage Flyers and get some Aleve which was basically free with just the store coupon. The exact Aleve was not available so he improvised - great husband! He was running out of his stash of Advil so he was quite happy to restock.

Yummy Stove Pipe Bread on a Snowy Day!

This is what it looks like outside today here in middle Tennessee. Schools were called off yesterday just on the prediction of snow. Yes, I can hear you Northerners laughing! See the big issue in the South is that we rarely get a good snow so no one knows how to drive in it (except for my husband who is from Michigan and even he stays off the roads). It's the inexperienced snow drivers that make it so dangerous. Anyway, in between working from home on my laptop, I made a new recipe with the kids. It's called Stove Pipe Bread and is delicious!

I have a couple of cool Pampered Chef stoneware bread crocks that I picked up at thrift stores for a couple of dollars. Months ago I went looking for a good recipe to use in them. I found this one and set it aside. I came across it this morning. It is actually meant for cooking in coffee cans, but crocks work great. I also used my bread machine rather than by hand as the recipe indicates. Just put the ingredients in and set for dough cycle. When complete, divide dough into two greased crocks and allow to rise for twenty more minutes in a warm area. Bake as directed.

Stove Pipe Bread

Ingredients:
  • 3-1/2 cups all-purpose flour
  • 1 package active dry yeast
  • 1/2 cup milk
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 1/4 cup granulated sugar
  • 1 tsp salt (necessary)
  • 2 large eggs
Directions:

Combine 1-1/2 cup flour and yeast in a bowl. Combine next 5 ingredients in a saucepan over medium heat. Cook until just warm, about 120°F. Stir into dry ingredients. Mix thoroughly with an electric mixer. Add eggs and continue to beat until mixture is smooth. Add 1 cup flour and mix well. Use a wooden spoon to stir in remaining flour.

Divide batter into 2 oiled 1 lb coffee cans. Cover with plastic lids and set aside in a warm area to rise about 1 hour. When dough has risen almost to the top of cans, remove lids. Preheat oven to 375°F. Bake 30-35 minutes. Let cool 10 minutes before removing from can.

Bargain Meal of the Week 1/28/10 - Fast Creamy Tomato Penne

It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

I discovered this recipe a couple of weeks ago as we began the Eat from the Pantry Challenge. I had a lot of ground pork in my freezer. I also seem to have collected quite a bit of high fiber pasta. Now I know it is much better for you than your plain white pasta, but I have had a real hard time putting it into my favorite recipes. The texture is grainier, and I just didn't want to ruin my favorite dishes. Thus, I knew that I had to find a brand new dish to use it in so I would not be comparing it to the original. This one is it! I don't even notice that the pasta is different, and it tastes great! You can use regular pasta in it as well. The pork produces a mild flavor and does not taste too "porky" if you know what I mean. It is also super fast to cook, which is great when you have limited time! I would make this again even if the items were not on sale.

Fast Creamy Tomato Penne

Ingredients:
  • 1 (16 ounce) package penne pasta
  • 2 tablespoons butter
  • 1/4 large white onion, chopped
  • 1/2 large green bell pepper, finely chopped
  • 1 pound ground pork
  • 1 (16 ounce) jar spaghetti sauce
  • 1 cup sour cream
Directions:
  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Melt butter in a large heavy skillet over medium heat. Saute onion and bell pepper until soft, about 5 minutes. Add ground pork, and cook until evenly brown. Drain excess fat.
  3. In a large pot, heat spaghetti sauce until bubbling. Stir in pork mixture, pasta and sour cream. Cook until heated through, about 5 minutes.
Top with shredded cheese, optional.

Kroger Mega Deal Trip 1/25/10

A few weeks ago one of my favorite coupons came out. It's the $2.50/1 Electrasol Dishwasher Detergent. It only comes out a couple times a year and usually has a short expiration date. I had a number of them and was very glad to see that Kroger had a sale on them and they are part of the mega event. Kroger's mega event is where you are given a list of items and when you buy 10 of them you get $5 off. Usually you can do this up to 30 items with a total of $15 off. Match those items up with coupons and you can get some great deals.

Hot Dog Casserole
from Taste of Home

Ingredients:
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 to 1-1/2 teaspoons salt
  • 1/4 to 1/2 teaspoon pepper
  • 1-1/2 cups milk
  • 5 medium red potatoes, thinly sliced
  • 1 package (1 pound) hot dogs, halved lengthwise and cut into 1/2-inch slices
  • 1 medium onion, chopped
  • 1/3 cup shredded cheddar cheese
Directions:
  1. In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.
  2. In a greased 2-1/2-qt. baking dish, layer a third of the potatoes, half of the hot dogs and half of the onions. Repeat layers. Top with remaining potatoes. Pour white sauce over all.
  3. Cover and bake at 350° for 1 hour. Uncover; sprinkle with cheese. Bake 10-15 minutes longer or until potatoes are tender.

Yield: 8 servings.

For the Locals: Great Free Place to Take Your Kids

Do you need a destination to take your children to that will have them talking about it forever? And totally free? My kids love this and I still hear them talking about it and begging to go back. It's surprisingly simple, but my children could spend an hour there just pulling the levers and imaging that he is actually moving. This is Rusty. You can find him out front of the Factory in Franklin, TN. He's a statue made of junk. He is also kid friendly with buttons and levers at the bottom that supposedly turn him on (not really). There are also some cute food stores/restaurants in the Factory. So if you need an outdoor break, go get a cup of coffee and sit out at the adjacent picnic table and let your kids play with Rusty. When you are tired out, take them to the cat shop where they can pet the cats. You will have to probably pull them out screaming but they will have a ball!
