Bargain Meal of the Week: Crispy Chinese Chicken Salad

It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

Here's a grown-up dish using a common kid food! A little something for everyone in the family! The nice thing is, most of the ingredients you probably have in your stock pile.

Crispy Chinese Chicken Salad
from Perdue.com

Ingredients:

• 1 package PERDUE® Breaded Chicken
  
• 1 package (16 ounces) broccoli slaw or cabbage coleslaw mix
• 2 packages (3 ounces) Ramen noodles, crushed, seasoning packets reserved
• 3 tablespoons finely chopped green onions
• 1/2 cup dry roasted peanuts
• 1/4 cup sesame oil
• 1/4 cup vegetable oil
• 1/3 cup rice vinegar
• 1/3 cup sugar
• 1 can (11 ounces) mandarin oranges, drained

Directions:

1. Heat chicken according to package directions. Cool slightly then cut into 1/2 inch slices. Combine slaw mix, crushed Ramen noodles and green onions and peanuts, if desired, in a large bowl.
2. For dressing, whisk together oils, rice vinegar, sugar and reserved Ramen seasoning mix in a small bowl.
3. Gently mix chicken slices and oranges just before serving. Drizzle dressing.

For The Locals: Free Starbucks Coffee Grounds for Your Garden

Generally, I don't like to buy coffee from Starbucks except for a few times a year - while on vacation and once in the fall. Today was cool and rainy in Nashville so to get out of the office, I decided today was the day for Pumpkin Spice Latte. Yummmm.

While at the Starbucks on the corner of Union and 3rd (next to Hotel Indigo) I noticed very large bags of coffee grounds in a basket next to the side exit. Above them was a handwritten sign that said free coffee grounds for your garden. So if you have a garden and would like some free coffee grounds, that is the place to go! I don't know if other Starbucks offer this, but it may be worth asking.

Great Site for Listening to Music!

I have been listening to this site for a while now. All you have to do is enter the name of someone you like to listen to and it produces a play list similar in style. So if you like Jason Mraz, enter "Mraz" and you have a cool playlist. You can also enter up to three artists to create a single playlist (option midway down the page). The other option I like is that if you don't like the chosen song you can just click to the next one.

It is a great way to discover other artists. Check it out at Last.fm. You can join the site and get other great goodies, but I am usually in such a hurry that I don't bother. Enjoy!

A Cool Tip When Using Restaurant.com

I like to get the restaurant.com gift certificates for travel. However, you don't always know where the restaurants are compared to where you will be staying. You can put the addresses into Yahoo's map finder but that takes a while and you can only really do one at a time. I found this cool application online that will plot the addresses that you enter onto a map. Go to myrouteonline.com and you can enter as many addresses you like to plot for free. You can just enter the address, city and state and the application will add the zip. It is great to get a visual indicator of where everything is at. Then you can printscreen your page and paste it to Word to print out. You then have a nifty list of all your necessary travel addresses to put into your GPS all in one place.

I am sure that there is probably a better application out there that will do this more conveniently, but I have yet to find it.

Bargain Meal of the Week: Crab Alfredo

It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

As a busy working mom, I love when a recipe is super easy and takes very little time to prepare!

Crab Alfredo

Ingredients:
1 (8 oz) package SeaPak® Maryland Style Crab Cakes, thawed
1 jar (16 oz) Alfredo sauce
8 oz dry linguine
1 Tablespoon butter

Directions:

THAW crab cakes according to package directions (either in the refrigerator over night or under running cool or tepid water).

PLACE a pot of water on high heat and bring to a rolling boil. Add salt to water according to taste preference. Cook pasta according to package directions, drain pasta and return to pot. Set pot aside (do not return pot to the heat).

PLACE butter into a medium skillet on medium high heat. Once butter is melted, use fingers to crumble crab cakes into butter. Cook for 2 minutes, stirring frequently.

POUR alfredo sauce into pan with crab meat. Stir to incorporate. Bring mixture to a low rolling boil, stirring occasionally.

POUR crab and alfredo sauce mixture over pasta and toss together. Serve immediately.
