Super Easy Awesome Oreo Cheesecake Recipe

My husband's office is having a cheesecake day in honor of National Cheesecake Day at the end of the month. So I have been trying out cheesecake recipes...yeah, like they really had to twist my arm! Here is a great one. The crust is made with Oreos and is probably one of the best crusts I have had. Unlike many cheesecake recipes, it does not have a ton of ingredients or a long list of directions. I have to say, it took me buying Oreos three times before I was finally able to make this recipe. Somehow they just kept disappearing...

Oreo Cheesecake

Ingredients:

1 1/2 rows of Oreos
3 tablespoons butter
3 packages cream cheese (Philadelphia)
3/4 cup sugar
1 1/2 teaspoons of vanilla
3 eggs

Directions:

1. Place cookies in plastic bag and crush finely with a rolling pin.
2. Put cookie crumbs in bowl. Add the melted butter and mix.
3. Press the cookie/butter mixture down firmly in a spring form pan, and then set this aside.
4. Grab a mixing bowl and mix the cream cheese (warm slightly in microwave for easier mixing) and sugar until smooth.
5. Add the vanilla and mix it in.
6. Add the eggs, mixing well after each egg is added.
7. Scrape the sides of the bowl, pour into the crust.
8. Bake in the oven 350 F for an hour, until you touch it and it feels firm.
9. Add a chocolate fudge topping if you wish!

Chocolate Fudge Topping

Ingredients:

2 slabs plain chocolate
1/4 cup heavy whipping cream
1 tablespoon water
1 tablespoon butter

Directions:

Melt all the above ingredients on a very low heat, stirring often. Put on cakes, the baked oreo cheesecake, ice cream, fruit dips, brownies etc.
