Sour Cream Nutmeg Cranberry Muffins Recipe

I found this recipe in a newspaper over the holidays and it turned out great! If you need to use up some sour cream or just find a great deal on it and want to cook it in something, this is the recipe to try!

Sour Cream Nutmeg Cranberry Muffins

I made this originally as a quickbread and added about a cup of white chocolate chips which was delicious. I also made this as muffins which turned out great as well!

Ingredients:
1/2 cup (1 stick) butter
1 cup sugar
2 eggs
1 teaspoon vanilla
8 ounces (1 cup) sour cream
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup dried or fresh cranberries (optional)

Topping:
1/2 to 1 teaspoon ground nutmeg
1 1/2 tablespoons sugar (coarse sugar is best)

Directions:
Heat oven to 400 degrees. In large bowl of an electric mixer beat butter and sugar for a good 5 minutes, until no grains of sugar remain. Add eggs and vanilla and beat until light and fluffy. Measure the flour, baking powder, baking soda, salt and nutmeg into another bowl, and whisk well to combine. Stir into butter mixture just until moistened. Fold in sour cream by hand. Fold in the cranberries.

Fill greased or paper-lined muffin cups two-thirds full. Combine the nutmeg and sugar to make the topping and sprinkle evenly over the muffins. Bake 20 to 25 minutes or until muffins test done. Cool in pan 10 minutes; remove to a wire rack to cool completely.

Makes 18 standard-size muffins, 12 large.

Per serving: 175 calories (41 percent from fat), 8 g fat (4.7g saturated, 2.1 g monounsaturated), 39.7 mg cholesterol, 2.4 g protein, 23.4 g carbohydrates, 0.4 g fiber, 149 mg sodium.

Free Red Gold Tomatoes at Kroger

I stopped in Kroger to pick up some beans for chili when I came across this great deal. Red Gold tomatoes are part of the buy 10 items get $5 off which makes them .49 each. I was at Publix over the weekend and picked up some Red Gold blinkies which were for $1/2 cans. I mentioned this deal to my sister in Murfreesboro and she found some blinkies today at her Publix as well. Here is the deal:

There are also usually Red Gold blinkies at Food Saver in Franklin for .55/3 which is still a great deal.

Great Publix Trip!

It's been a really long time since I have had a great shopping trip. Lately, it seems like I stop for a couple of things and that is it. However, when I saw some of the great deals available at Publix (see Southern Savers Friday Finals for ideas) I pulled out the coupons and started clipping!

For the Locals: Last Week to Get a Fantastic Deal at the Franklin Recreation Center

Several years ago I finally ended my love/hate relationship with the YMCA. I adored having access to all the great machines and classes. But I hated the guilt of rarely going and the $100+ monthly family fee that I was obviously wasting. The timing was always wrong for a working mom to take the classes. For some people it is perfect for their needs, just not for me. I thought that was the end of ever seeing the inside of a lovely gym.

Two years ago I discovered that in January the Franklin Recreation Complex has a sale on their visits and memberships. Woohoo! Until the end of this month you can purchase 30 visits for $30. Now that is a deal! I might add that next to the gym there is a public park with a walking/running track. I point this out because if you are a once a week gym visitor and don't think 30 visits would cover you, on pretty days you can spend your gym time on this track without using up one of your visits. It winds around a sports field and beside a river which makes it a beautiful walk.

There are also some great package deals like a family membership for the year for $200 (that would barely cover two months at the Y). I can really see this coming in handy when my kids are older.

If you are not local, I would suggest you check out your local recreation department to see if they have any good deals this month!

Family Senior (55 and older) was $160 NOW $135

Yearly passes include 12-months use of the wellness centers, indoor and outdoor pools, gyms, walking tracks, racquetball courts and game rooms at the Franklin, Brentwood, Fairview and Spring Hill locations. Amenities vary by facility. Prices given are for Williamson County residents. Non-resident pricing is also available.

Stop by the Franklin Recreation Complex, 1120 Hillsboro Road. for a tour of the new 4,200 square foot state-of-the-art wellness center. The new center has 78 pieces of equipment, stretching area, 11 flat screen tvs, audio ports on cardio equipment, free weight area and more.
