Menu Planning Monday: Ate Too Much at Thanksgiving Edition!


Monday: Clean the Pantry Frittata
Tuesday: Sausage Potato Soup (recipe below)
Wednesday: Spinach Turkey Meatloaf (surprisingly really good!)
Thursday: (Club Meeting) 40 Clove Garlic Chicken (crockpot) & Steamed Vegetables
Friday: Pasta e Fagioli
Saturday: Tuna Muffins (recipe below) and Vegetables
Sunday: Boston Baked Beans (crockpot)

Potato Soup

Ingredients:
6 cups of 100% fatfree chicken broth
1 bag frozen Ore-Ida O'Brian potatoes
1 package country gravy (fat free)
Salt and pepper to taste
Diced sausage (optional)

Directions:
Heat broth, potatoes, salt and pepper. When heated through, add gravy packet and stir with a wisk until combined. Simmer until potatoes are cooked. Quick and easy to make.

You can add cooked sausage (recommended for husbands)!

Tuna or Salmon Muffins

Ingredients:
Three 6 ounce cans tuna or salmon, well-drained
3 eggs
1 stalk celery, chopped fine
1/2 medium green pepper, chopped fine, 2 1/4 ounces
3 tablespoons onion, chopped fine, 2 ounces
1/4 teaspoon Old Bay seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
6 ounces cheddar cheese, shredded

Directions:
Mix all ingredients and spoon into 12 well-greased muffin cups. Bake at 350ยบ for 30 minutes until puffed, set and lightly browned around the edges.

Serve with:

CHIPOTLE MAYO
1/4 cup mayonnaise
1/8 teaspoon garlic powder
1 teaspoon chipotle chile powder
Dash pepper

Mix all ingredients and chill. Makes about 1/4 cup.

Pizza Baking Tip

Often I will post about something I want to remember or come back to. This is one of those posts! The Suburban Jungle (check our her Mediterranean pizza) mentioned this in her recipe:

"When you make homemade pizza, it's really important to pre-bake the crust before you add the ingredients. This can make all the difference between having a good pizza and a gummy, yucky pizza. You should do this even if you are using a pre-packaged pizza crust. You only need to bake it for 5-6 minutes (higher heat is better here, maybe 500*) You can use this time to clean up the kitchen or prepare your sauce."

Thanksgiving Shopping - No Coupons!

Thanksgiving is fast approaching, and there are some fantastic deals around for typical holiday food. I just wish I had more space in my freezer to stock up on all the inexpensive turkeys! Now is a great time to purchase them. Currently GFS has the best price on Turkey that I could find in our area. Also they sell the cutest butter shaped like a turkey that looks great at the table (Christmas tree shaped at Christmas).

Usually for Thanksgiving I make Mac & Cheese for the picky kid eaters. I have a great recipe to make it, but I realized last year that the kids can't tell the difference and could care less if it was homemade or premade and warmed. So I decided to focus my cooking efforts on the things that I liked and make my day easier, which is why I buy the large pan of kid food ready to pop in the oven.


Oddly enough, I did not use a single coupon this week. It was not intentional, two of the three stores do not take coupons and the items at HG Hill did not have any coupons to use toward them.

If anyone reading is local, GFS (Cool Springs behind Costco) is having a Thanksgiving taste testing on their products today (11/21). You can go try their food out to see if it is table worthy!

Bargain Meal of the Week 11/20- Sweet Potato Turkey Shepards Pie


It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

This is a great recipe for after Thanksgiving when you have left-over Turkey.

Sweet Potato Turkey Shepard's Pie

Ingredients:

Meat Filling -
1 tablespoon olive oil
1 small onion, diced
2 garlic cloves, minced
4 sage leaves, chopped
1-2 teaspoon curry powder
1/2 cup buttermilk
1 tablespoon flour
1 1/2 lbs diced cooked turkey
1 cup frozen peas

Sweet Mashed Potato Topping -
2 lbs sweet potatoes, peeled and diced
1 tablespoon honey
1/2 cup buttermilk
1 tablespoon butter
1/4 teaspoon cinnamon
salt and pepper
1-2 tablespoon butter

Directions:

Boil sweet potatoes till tender. Add honey, buttermik, butter, cinnamon, salt and pepper to taste.

Mashing till smooth. Set aside.

Saute onions and garlic in oil until tender. Add diced turkey and saute until warmed through.

Add curry, salt, pepper, sage, sprinkle flour over turkey mix and pour in the milk. Add the peas.

In a butter 8x8 casserole pan lay meat mixture then place potatoes over meat covering all to seal.

Top with dabs of butter. Bake in a 350 degree oven for 15-20 minutes just to slightly brown top.

For Those of You Who Do Family Christmas Letters...

Here is an opportunity to save yourself some time! Our family, well me, creates a Christmas letter every year. Our relatives are very spread out, and it's a great way to keep in touch with them. Super Great Very Chocolate Cake...MMMmmmmmh!


I have been wanting to try this recipe for several weeks but have just not had the time. I finally made it, and it is as great as everyone at Allrecipes.com said it was. Apparently, the person who posted the recipe won a County Fair with it. It came out very moist and dense with a nice crisp crust on the outside. It does not need a frosting, it is that good. Here is the recipe:

Too Much Chocolate Cake

Ingredients:

1 (18.25 ounce) package devil's food cake
mix
1 (5.9 ounce) package instant chocolate
pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs
1/2 cup warm water
2 cups semisweet chocolate chips


Directions:

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into a well greased 12 cup bundt pan.

Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan at least an hour and a half before inverting onto a plate If desired, dust the cake with powdered sugar.

Concern Over Canned Foods Article

Here is a very interesting article concerning the amount of BPA in canned foods. I thought the danger was in microwaving steamed vegetables in their plastic bags, but it turns out that the danger is in the lining of the cans in popular brands of foods. I am definitely going to rethink Progresso!

Favorite Thanksgiving Recipes!

Every family has recipes that have been passed down and are favorites for the holidays. I thought I would share ours. I must admit, however, part of the reason I am doing this is so that I have all my recipes in one place and easy to access when I start cooking! These are all tried and true recipes. They make me hungry just typing them!

Corn Pudding Casserole (from Sister-in-law)
Spinach and Artichoke Casserole (from Mom)

Sweet Potato Casserole (recipe follows, from Mom)
Pineapple Chutney (my newest favorite Thanksgiving recipe)
Easy Cranberry Orange Salad (from Great-Grandmother)
Red Cabbage (all the way from Denmark)
Bohemian Bread (my recipe which won at the State Fair this year)
Pumpkin Bread (my recipe which is very popular)
Cherry Chocolate Cake (from my mother-in-law)
7 Up Pound Cake (recipe below, from my sister)

I usually just follow the directions on the turkey wrapper so I don't have a fantastic recipe for Turkey. If you have one, I would really like to try it. Also any great stuffing recipe that you have, I would really like to have it as well. The older generation in our family would often make a Danish prune stuffing of which I have never been fond! Please leave a link or recipe!

Sweet Potato Casserole

Ingredients:

5 sweet potatoes
1/4 teaspoon salt
1/4 cup butter
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup white sugar
2 tablespoons heavy cream
1/4 cup butter, softened
3 tablespoons all-purpose flour
3/4 cup packed light brown sugar
1/2 cup chopped pecans

Directions:


1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
2. Bake sweet potatoes 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash.
3. In a large bowl, mix the mashed sweet potatoes, salt, 1/4 cup butter, eggs, vanilla extract, cinnamon, sugar, and heavy cream. Transfer to the prepared baking dish.
4. In a medium bowl, combine 1/4 cup butter, flour, brown sugar, and chopped pecans. Mix with a pastry blender or your fingers to the consistency of course meal. Sprinkle over the sweet potato mixture.
5. Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned.

7 Up Pound Cake

Ingredients:

1 cup butter, softened
1/2 cup shortening
3 cups sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
5 eggs, at room temperature
3 cups all-purpose flour
1/2 teaspoon salt
1 cup 7 UP

For the Glaze:

1/4 cup 7 UP
1/2 cup sugar


Directions:


Preheat oven to 300°F. Grease and flour a 10-inch tube pan.

Combine butter, shortening, sugar, vanilla and almond extract in the bowl of an electric mixer. Beat until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition.

In a separate bowl, combine the flour and salt, and add to butter/sugar mixture alternately with 1 cup 7 UP, beating well after each addition.

Spoon batter into prepared 10-inch tube pan, and bake for 1 hour and 45 minutes, or until cake tester comes out clean. Cool in pan on a wire rack for 10 minutes, then invert on serving plate and remove pan.

While cake is cooling, make the glaze by stirring together the 1/4 cup 7 UP and 1/2 cup sugar in a saucepan. Bring to a boil over medium heat, and boil 1 to 2 minutes or until sugar is completely dissolved. Punch holes in top of warm cake with a toothpick. Spoon glaze over cake, and cool completely before serving.
