Bargain Meal of the Week 11/6/09


It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

Items on sale that can be used in this meal:

Hormel Black Label Bacon,16 oz., $3

Green Bell Peppers, $1.29 lb

Red Delicious Apples, Braeburn or Jonagold, 97¢ lb


Bacon Ricotta Quiche

Ingredients:

1 c. egg substitute
1/4 c. onion, chopped
1/4 c. tomato, chopped
1/2 c. bell pepper, chopped
2 slices crisply cooked bacon, crumbled
2 oz. Ricotta cheese
1 tbsp. self-rising flour

Directions:

Combine all ingredients and bake in a lightly oiled or Pam-sprayed pie plate or quiche pan. Bake at 400 degrees for 30 minutes or until center is set. Serves 4.

Serve with:

Apple Onion Saute

Ingredients:

4 medium apples cored and sliced
3 tablespoons of butter
2 onions sliced
1/2 t marjoram
salt and pepper to taste
1/2 t lemon juice

Directions:

Heat butter in a large skillet. Add onions and apples. Saute over medium heat until onions and apples are tender. Season with marjoram, salt and pepper. Stir in lemon juice. Serve hot.
