Fantastic Low Carb Recipe: Chicken Lettuce Wraps

I saw this in a Publix magazine, tore it out and had it in my purse forever. I finally made this recently, and it was great! My ten year old son begged for more and made me promise to make it again. The best part is that it is so healthy and super easy to make. I had never used lettuce as a wrap but loved it. I also like that it uses basic low-carb ingredients in a new and unusual way. Next time I will double the recipe.

Chicken Lettuce Wraps


Ingredients:


2 cups package coleslaw mix
1 sliced medium red pepper
2 chopped green onions
2 tablespoons snipped fresh cilantro

2 6-oz packages of refrigerated cooked chicken breast strips
2 tablespoons bottled teriyaki sauce

8 Bibb lettuce leaves

Directions:

Combine first four ingredients in a food processor and process with several on/off pulses until finely chopped.

Transfer slaw mixture, two packages of chicken strips and two tablespoons of teriyaki sauce to large skillet. Cook and stir over medium heat until heated through.

Spoon slaw mixture and chicken onto 8 Bibb lettuce leaves; roll up.

Makes 4 servings.

Organic Strawberries at Whole Foods for $1.99 Friday 4/29


Every once in a while Whole Foods will have an amazing sale on one item, usually on a Friday. Tomorrow (4/29) only, get 1 lb packages of Organic Strawberries for $1.99/ea. That is a savings of $3/ea. Also, it's cheaper than the strawberries on sale at Publix this week which are not organic!

For the Locals: Treasures from Tutankhamun!

For lunch I recently visited the Tennessee State Museum. For those of you who have never been, it is located in the TPAC Building in downtown Nashville. You walk in the main entrance and off to the right are stairs that lead down into the floors of the museum. The best part is that it is free. I have spent many lunch hours there and love to discover new things every time I go. Just fyi, there is a fantastic permanent collection of Tennessee pottery.

Currently there is also an amazing traveling exhibit for all things Egyptian. The museum has done an excellent job with presentation. It is a three-part exhibition looking at the art, history, and culture of ancient Egypt and its influence on Tennessee. You can see it in the Changing Galleries (located on the bottom floor) until Sept. 4, 2011. I will definitely be taking the kids back for this one!


The exhibit, entitled Egyptian Relics, Replicas & Revivals: Treasures from Tutankhamun, features ancient artifacts from the Institute of Egyptian Art & Archaeology of the University of Memphis (IEAA/UM) and beautifully detailed replicas presented in the International Museum Institute of New York (IMINY) traveling exhibition, “Tutankhamun: ‘Wonderful Things’ from the Pharaoh’s Tomb.”

Kroger Trip and Free Pedigree Jumbones!

I stopped at Kroger because my daughter's Daisy Troop was collecting pet supplies to donate to a local pet charity. This is the reason why there is no trip picture because I gave a lot of it away. For the Locals: Williamson County Young Scholars Summer Program

This is something that no one told me about, but I happened across it and my kids love it. The Young Scholars Institute is a wonderful two week program during the summer that Williamson County children between 7 and 14 can attend. It's a learning opportunity where kids get to pick the things they want to learn from a long list of classes (like Percy Jackson, Digital Photography or Cooking). Kids do not have to be brilliant, just able to pay attention and want to be there. It cost a little more than summer camp and you do have to pay extra for aftercare through the MAC program who picks them up and transports them to the Holiday MAC site. However, last year they provided a healthy hot meal for lunch for free for the elementary students through a grant. It is totally worth it and a great learning opportunity.

There are Junior Scholars and Senior Scholars, each at a different school. However if you have children in both age groups, you can drop them off at the Senior Scholars in the morning and they will take the younger kids to the Junior Scholars location. Just a tip, if you need to be at work early and can't wait for Junior Scholars to begin, drop your kids off at the Senior Scholar site as they begin earlier and will take them where they need to be.

Flopsy Bot was designed by the Easter Bunny to work in the Easter Egg Factory. However, he has decided that if he sees another Easter Egg he will explode. His dream is to work in pharmaceutical sales.

I recently got a new phone that came with Kindle software and I LOVE it. It makes football and soccer practice with the kids so much nicer! For the Locals: Franklin Main Street Festival April 30-May 1, 2011

You know those fun homey festivals that you see on TV in quaint little towns that you wish you could experience at least once in your life? Well this is it. It's free. Well, kinda. They sell amazing food and art and games and, well the list goes on. The kids LOVE it. It's packed with locals, pets and visitors. A couple of years ago there were even Star Wars characters walking around. If you get a chance, check it out. HERE is more information.

Hours for the free street festival are 10 a.m. to 7 p.m. Saturday, with the Fourth Avenue Street Dance continuing until 10 p.m., and all activities re-opening noon to 6 p.m. Sunday. Arts and crafts booths line Main Street from First to Fifth Avenue.
