Apple Glazed Pork Loaf Recipe

For those of you who have a lot of ground pork in your freezer due to the wonderful Charcoal coupon, here is a great recipe from the October Issue of Better Homes and Gardens.

Apple Glazed Pork Loaf
at Better Homes and Gardens

Ingredients

  • 1/2 cup apple jelly
  • 1 Tbsp. Dijon-style mustard
  • 2 small apples
  • 2 eggs, lightly beaten
  • 1 lb. ground pork
  • 1 medium sweet potato, chopped
  • 1 Tbsp. olive oil
  • 1/8 tsp. cayenne pepper (optional)
  • 2 ciabatta sandwich rolls, split and toasted
Directions

1. For glaze, microcook jelly on HIGH about 20 seconds. Stir in mustard. Set aside. Core and chop one apple.

2. Combine eggs, pork, half of chopped apple, and 1/2 teaspoon each salt and pepper. Form into 4 loaves, 6x2 inches; place on greased 15x10x1-inch pan. Spoon some jelly glaze over loaves. Bake 10 minutes in preheated 425 degree F oven. Thinly slice remaining apple. Top loaves with apple slices; drizzle with more jelly glaze. Bake 5 minutes more or until internal temperature is 160 degree F.

3. In bowl microcook chopped sweet potato on HIGH 4 minutes until nearly tender. In skillet cook potato and remaining chopped apple in oil on medium-high. Sprinkle with salt, pepper, and cayenne. Cook 3 minutes until tender. Serve pork loaves on ciabatta with sweet potatoes. Makes 4 servings.

Protecting Your Family's Finances in Case Something Happens to You

Cookbook Heaven!

We live in Franklin, TN. For those of you who have never heard of Franklin, it is this adorable, quaint town just outside of Nashville. It has a lovely town square with tons of antique and art shops. It also has many really old houses. Today we went to a house built in 1839 for a Cub Scout activity. The kids got to learn about geology from the lady specialist who owns the house with her husband and young son.

Much to my pleasure, my husband was hanging out with the boys which gave me a little free time. While waiting, I was drawn to a bookcase in the hallway and to my excitement, it was filled with mostly old cookbooks of all shapes and sizes. Now here was a woman after my own heart. I was in heaven! If you had told me when I was twenty that finding stacks of decaying cookbooks would make me so excited, I would have laughed. I don't know what it is about reading them that I like. Perhaps it's the glimpse of what people's lives were once like - imagining a family in 1940 enjoying a family meal together. Or maybe it's the personal comment made by the cook and handwritten next to the recipe. Okay, I am sounding a little crazy so I will move on.

Anyway, I jotted down a couple of interesting recipes from a book entitled Recipes from the Old South by Martha Meade, 1961. I did not write down the bread directions as I will change it to be used with a bread maker. Here they are:

Rich Loaf Bread
Ingredients:

4 cups of flour
3/4 c milk
2 t of sugar
1 t of salt
3 t of butter
1 yeast cake
3 eggs

Directions:

Place all in bread machine, liquids first, dry ingredients, then yeast. Set to dough cycle.

When dough cycle is complete, turn oven on for 200 degrees. When it reaches 200, turn off.

Remove dough from machine and
mold into your desired shape. Put in warmed oven. Add a cup of steaming water in a mug to the oven for additional help in rising the dough. Allow to rise for 30 minutes.

After rise is complete, paint the loaf with egg white. Put back in the oven and bake at 340 degrees for 35 to 45 minutes.


Pumpkin Jam


Ingredients:

1 14-16 lb pumpkin, not too ripe
sugar
5 t ground ginger
3 lemons, peel and juice

Directions:

Remove seeds. Peel pumpkin and cut into 1 1/2 inch cubes. Weigh pumpkin after it has been prepared and add 3/4 lb of sugar for each pound of pumpkin.

Let this mixture sit over night in a large mixing bowl or enamel kettle. In the morning, add ginger and cut-up pieces of lemon peel. Simmer very slowly all day long or until syrup is thick.

Stir lemon juice into the jam about half an hour before removing it from the heat.

I was going through my receipts and realized that I had only spent $150 out of my $250 budget for the month. So I decided to splurge and stock up on my kids favorite food - chicken nuggets. That coupled with the need to buy dog food really pushed my total up. After last week's triples I think I have become spoiled in spending less than $10 at the store per trip because I really cringed when I paid!

Bargain Meal of the Week 9/25/09

It's time for another week of Bargain Meals! Jamaican Jerk Baked Chicken

This dish is inspired by my cousin-in-law, a fantastic Pampered Chef cook!

Ingredients:
  • whole chicken
  • olive oil
  • Jamaican Jerk Seasoning
  • half a lemon
Directions:

Rinse chicken and pat dry. Place in baker breast side up. Brush chicken with olive oil, sprinkle with Jamaican Jerk seasoning, and add squeeze of half a lemon.

Bake in 375 degree oven for one hour, or if you use a Pampared Chef Baker, you can cook in the microwave for thirty minutes, checking to confirm that internal temperature reaches 170 degrees.

If you have never used a Pampered Chef Baker, they are totally cool. You can cook all kinds of things in the microwave that you previously did not. Makes dinner preparation quick.

Serve chicken with your choice of rice and vegetables.

Harris Teeter Super Doubles are Coming!

I'm not sure what has come over Harris Teeter as we just had triples last week, but there is a rumor that they will be having Super Doubles again starting 9/30. Here is the beginning of a coupon match-up at Hot Coupon World.

Cheap Soup at Walgreens

I walked to Walgreens today for lunch since it finally stopped raining long enough to get out. In the Walgreens' advertisement (usually can pick up at the door) there is a coupon for Campbell's soup, making them .89 each. If you also use the printable $1/2 then each will be .39 - a good deal on Campbell's cream soups. There is also an in-ad coupon for Arizona Tea 2 for $1.

French Apple Tart Recipe

A few days ago I shared with you a photo of this totally awesome apple tart my friend made for me because I was under the weather. Since then I have had several requests for the recipe. So my friend emailed it to me and I wanted to share it with you! This recipe is by Ina Garten (The Barefoot Contessa) and you can download a pdf of the recipe here (second one). It is really, really good!

French Apple Tart
By Ina Garten

FOR THE PASTRY
2 cups all-purpose flour
1/2 teaspoon kosher salt
1 tablespoon sugar
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced 1/2 cup ice water

FOR THE APPLES
4 Granny Smith apples
1/2 cup sugar
4 tablespoons (1/2 stick) cold unsalted butter, small-diced
1/2 cup apricot jelly or war sieved apricot jam (see note)
2 tablespoons Calvados, rum, or water

For the pastry, place the flour, salt, and sugar in the bowl of a food processor fitted with the steel blade. Pulse for a few seconds to combine. Add the butter and pulse 10 to 12 times, until the butter is in small bits the size of peas. With the motor running, pour the ice water down the feed tube and pulse just until the dough starts to come together. Dump onto a floured board and knead quickly into a ball. Wrap in plastic and refrigerate for at least 1 hour.

Preheat the oven to 400 degrees. Line a sheet pan with parchment paper.

Roll the dough slightly larger than 10 x 14 inches. Using a ruler and a small knife, trim the edges. Place the dough on the prepared sheet pan and refrigerate while you prepare the apples.

Peel the apples and cut them in half through the stem. Remove the stems and cores with a sharp knife and a melon baller. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally down the middle of the tart and continue making diagonal rows on both sides of the first row until the pastry is covered with apple slices. (I tend not to use the apple ends in order to make the arrangement beautiful.) Sprinkle with the full 1/2 cup sugar and dot with the butter.

Bake for 45 minutes to 1 hour, until the pastry is browned and the edges of the apples start to brown. Rotate the pan once during cooking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don’t worry! The apple juices will burn in the pan but the tart will be fine! When the tart’s done, heat the apricot jelly together with the Calvados and brush the apples and the pastry completely with the jelly mixture.

Loosen the tart with a metal spatula so it doesn’t stick to the paper. Allow to cool and serve warm or at room temperature.

Note: If you can only find apricot jam, heat it first and then sieve it before making the glaze.
Note: For a really fast apple tart, you can use one sheet of frozen puff pastry, defrosted. Roll out to 10 1/2 x 10 1/2 inches and then proceed with the apples.

My Friend is Awesome!

Bargain Meal of the Week 9/18/09

4 Fast Fixin’ Chicken Patties
1 c. spaghetti sauce
4 slices mozzarella cheese
¼ c. Parmesan cheese

Preheat oven to 350°F. Place Chicken Patties on a baking pan and heat until slightly browned (about 35 minutes). Warm the spaghetti sauce in the microwave. Top each with spaghetti sauce, 1 slice of mozzarella and 1 tablespoon Parmesan cheese. Place under broiler until cheese is slightly browned and bubbly.

Serve with your choice of rice and vegetables.

In the mood for fall comfort food but don't want the extra fat? Here is a great and super easy recipe for you!

Low Fat Pumpkin Brownies


Ingredients:
1 box low fat brownie mix
1 15 oz. can of pumpkin


Directions:
Mix can of pumpkin in with the mix and mix well.
No need to add any other ingredients.

Bake according to directions on box.

Makes about 16 servings.
