Half Price Day at Goodwill on Saturday!

Saturday is the first Saturday of the month! You know what this means... everything at all of the Goodwill stores (except the outlet) will be half-price all day starting at 8 a.m.

January Eat From the Pantry Challenge!

I must admit that my cupboards are bulging. I generally spend around $200-250 a month on groceries for my family of five and three pets. This was a drop in the bucket a few years ago, but now, with strategic shopping, it easily provides an abundance and even allows me to donate.

So I was very happy to join Money Saving Mom and Life as Mom for a month long challenge of eating from my pantry. I did this last May and it was a great success. I have quite a bit of supplies in my stockpile that are near expiration, and I am looking forward to using them so they will not be wasted. My Menu Plan Mondays in January are going to reflect this challenge as I will be using mostly ingredients I already have on hand!

The best part of this challenge is that you can set your own rules and limits. The goal is to cut back on spending and use up what you already have in you pantry, fridge, and freezer. I think it will be fun as it will force me to be creative! Maybe with fewer shopping trips I might be able to hit the gym more often...

Goals for January:


1. Weed out all expired food and move near expirations to front for immediate use.

2. Clean out my freezer.

3. Buy only freebies and fresh foods (milk, bread, produce) from the store.

4. Pet food does not count.

5. Spend $20 or less per week during the month.

6. Apply what I would have spent on groceries to debt.

    Yummy Recipe: Apple Twists

    I was looking for a great seasonal recipe for apples. Here is a really nice one. These miniature pastries are a lighter version of old-fashioned apple dumplings.

    Spicy Apple Twists
    recipe by Pillsbury

    INGREDIENTS

    Twists:
    2 large baking apples, peeled, cored
    1 1/2 cups Pillsbury BEST® All Purpose, Unbleached or Self Rising Flour*
    1/2 teaspoon salt
    1/2 cup shortening
    4 to 6 tablespoons cold water
    1 tablespoon margarine or butter, softened

    Topping:
    1/4 cup margarine or butter, melted
    1/2 cup sugar
    1 teaspoon cinnamon
    1 cup water

    DIRECTIONS

    1. Heat oven to 425°F. Cut each apple into 8 wedges. Lightly spoon flour into measuring cup; level off. In medium bowl, blend flour and salt. With pastry blender or fork, cut in shortening until mixture resembles coarse crumbs. Sprinkle flour mixture with water 1 tablespoon at a time, mixing lightly with fork until dough is just moist enough to hold together. Shape dough into ball.

    2. On floured surface, roll dough lightly from center to edge into 12-inch square. Spread with 1 tablespoon softened margarine. Fold 2 sides to center. Roll to 16x10-inch rectangle. Cut crosswise into 16 (10-inch) strips. Wrap 1 strip around each apple wedge. Place 1/2 inch apart in ungreased 13x9-inch pan.

    3. Brush each wrapped apple wedge with melted margarine. In small bowl, blend sugar and cinnamon; sprinkle over wrapped apples.

    4. Bake at 425°F. for 20 minutes. Pour water into pan. Bake an additional 12 to 17 minutes or until golden brown. Spoon sauce in pan over twists. Serve warm or cool, plain or with whipped cream.

    If you have never been to a Merry Tuba Christmas, you are in for a treat! If you can imagine the sound of about a hundred tubas playing Christmas songs together, that is what you will hear. It is loud, fun, and really puts you in the Christmas spirit. Best of all, it's free.

    Here is the information:


    Tues, Dec 15, First Baptist, 108 7th Avenue South, Nashville, 664-6000. Concerts at 11 am and 12:30 pm. The 23rd annual Merry Tuba Christmas concert features Christmas carols played by a mass choir of over 100 tuba players (ranging from school-age children to professional players). The concerts are free. But, donations will be collected to benefit the Wednesday lunches for the Homeless that Downtown Presbyterian Church provides.

    Comfort Beef Casserole

    Ingredients:
    1 and 1/2 lbs. ground beef
    1 clove garlic, minced
    1/2 tsp. salt
    pepper, to taste
    1 tsp. sugar
    3 (8 0z.) cans tomato sauce
    3 oz. cream cheese, softened
    1 and 1/2 C. sour cream
    6-8 green onions, sliced
    8 oz. egg noodles
    1/2 C. grated cheddar

    Directions:
    Brown meat and drain. Add seasonings and tomato sauce, simmer for 20 minutes. Meanwhile boil noodles according to package directions. In a medium bowl, combine sour cream, cream cheese, and green onion. Butter a glass 9 x 13. Put in half of noodles, half of cream cheese mixture, and half of meat mixture. Repeat layers and top with cheese. Bake at 350 degrees for 20 minutes.

    Savory Bacon Ranch Bread

    Ingredients:
    • 1 1/4 cups water
    • 1 tablespoon butter or margarine, softened
    • 3 3/4 cups bread flour
    • 6 slices bacon, cooked crisp and crumbled
    • 2 tablespoons sugar
    • 2 tablespoons dry ranch salad dressing and dip mix (from a 1-ounce packet)
    • 1/2 teaspoon salt
    • 1 1/4 teaspoons active dry yeast
    • Additional bread flour, only if needed

    Directions:
    Using a 1 1/2- to 2-pound capacity bread machine, place ingredients (except the additional flour) into bread pan according to manufacturer's directions. Close lid; select "basic" setting and light crust color; start machine. (Check dough during kneading stages; if dough sticks to sides of bread pan, sprinkle with a little additional flour, 1 tablespoon at a time, until dough no longer sticks.) After bread has baked, remove from bread pan to cool on rack. Cool slightly before slicing. Makes a large loaf.

    Notes:
    Combine the remaining dry ranch salad dressing mix (about 1 1/2 tablespoons) with softened butter or a package of cream cheese to make a tasty spread for the bread.

    Favorite Party Drink: Moscow Hot Chocolate

    I made these yesterday at a friend's cookie exchange. Boy, were these good! And they are perfect for the season.

    Moscow Hot Chocolate
    from Allrecipes.com

    "This is hot chocolate with vanilla-flavored vodka and amaretto. It keeps you warm on a cold day. Try it topped with whipped cream!"

    Ingredients:

    1 fluid ounce vanilla flavored vodka
    3/4 fluid ounce amaretto liqueur
    1 tablespoon instant hot chocolate mix
    4 fluid ounces hot milk

    Directions:


    Into a coffee mug, pour in the vanilla vodka, amaretto, and add the hot chocolate mix. Pour in the hot milk and stir to blend well.

    Chicken Broccoli Casserole

    Ingredients:

    3 Chicken breast, chopped into bite size pieces
    2 (10 ounce) boxes frozen chopped broccoli, thawed
    2 cups cooked rice
    8 ounces shredded Cheddar cheese
    2 (10 3/4 ounce) cans cream of chicken soup
    1 small onion, chopped 2 T butter

    Directions:
    1. Cook chicken in butter in large skillet.
    2. Add onions a couple of minutes before chicken is completely browned.
    3. Add remaining ingredients and cook just until cheese is melted.
    4. Put in 2 quart pre-greased casserole dish .
    5. Bake at 350 for 30 hour.
