HG Hill Favorite Deals This Week 9/30/10

Canned Pumpkin at Aldi's

With the holiday season just around the corner, I just wanted to let you know that Aldi has canned pumpkin for .89 each. Canned pumpkin seems to be seasonal, and in the last couple of years trying to find it has been a challenge. This is a good price so you may want to stock up. It is wonderful (and healthy) in chili, pasta and brownies.

Bargain Meal of the Week 9/24/2010: Quiche Cups


It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Quiche Cups

The ingredients are not exact as you can add or subtract items depending on taste.

Ingredients:

Eggs or Egg Substitute
Cheese
Biscuit Tube
Diced meat of choice
Diced vegetables of choice

Directions:

Heat oven to 375F. Grease muffin cups.

Separate biscuits and roll with a rolling pin to expand slightly. Press into muffin cups, forming 1/4 inch rim. Place diced meat and/or vegetables in the bottom of the dough-lined muffin cups. Spoon about 2 tablespoons of the egg mixture over and top with cheese.

Bake for 20 to 25 minutes or until filling is set and edges of biscuits are golden brown.

Ground Turkey Casserole
from allrecipes.com

Ingredients
  • 1 pound ground turkey
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon white sugar
  • 1 (8 ounce) container sour cream
  • 1 (8 ounce) package cream cheese
  • 1 (12 ounce) package uncooked egg noodles
  • 2 cups shredded Cheddar cheese
Directions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium-high heat, saute the ground turkey for 5 to 10 minutes, or until browned. Drain the turkey, stir in the tomato sauce and sugar, and set aside. In a medium bowl, combine the sour cream and cream cheese. Mix well and set aside.
  3. Cook noodles according to package directions. Place them into a 9x13-inch baking dish, then layer the turkey mixture over the noodles. Then layer the sour cream mixture over the turkey, and top with cheese.
  4. Bake at 350 degrees F (175 degrees C) for 20 to 35 minutes, or until cheese is melted and bubbly.

Great Time to Visit Nashville's Farmer's Market

I walked to the Nashville farmer's market for lunch today since it was so beautiful outside! All the pumpkins and squash are a feast for the eyes. The prices are great as well. For about $13 I got:

Bargain Meal of the Week 9/12/10: Spaghetti a la Philly

It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

Spaghetti a la Philly

from Kraftrecipes.com

Ingredients:

1/2 lb. spaghetti, uncooked
1 lb. extra-lean ground beef
1 jar (24 oz.) spaghetti sauce
4 oz. (1/2 of 8-oz. pkg.) cream cheese, cubed
2 Tbsp. grated Parmesan cheese

Directions:

COOK spaghetti as directed on package.

MEANWHILE, brown meat in large skillet. Stir in sauce and cream cheese; cook on low heat 3 to 5 min. or until sauce is well blended and heated through, stirring frequently.

DRAIN spaghetti. Add to sauce; mix lightly. Place on platter; top with Parmesan.

An Amazing Chocolate Zucchini Quick Bread Recipe!

I am always looking for a great recipe that I can put in healthy ingredients. This recipe ranks up there with Pioneer Woman's Prune Cake. And if you have never tried that, you are missing out. Anyway, I had planned to enter the State Fair's competition for vegetable quick bread and was looking for a good zucchini recipe. So I found this one at allrecipes.com which had a near perfect rating from over 400 users. It is amazing. My picky kids kept going back for more, even after I told them that there was zucchini in it. I made it on Friday for the first time to submit to the State Fair. Guess what? I won third place. Very cool. I just wish I had the recipes for the first and second place quick breads!

Chocolate Zucchini Bread

Ingredients:

2 (1 ounce) squares unsweetened chocolate (OR 6 tsp of cocoa & 2 tbsp of butter)
3 eggs
2 cups white sugar
1 cup vegetable oil
2 cups grated zucchini
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup semisweet mini chocolate chips

Directions:

Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.

In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well. Stir in the flour baking soda, salt and cinnamon. Fold in the chocolate chips. Pour batter into prepared loaf pans.

Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.

I sprinkled some sugar and chocolate chips on the top before baking.

Good Time to Buy Lots of Newspapers!

It has been reported that there will be four inserts in tomorrow's paper. That coupled with Super Doubles starting on Wednesday at Harris Teeter makes it a great time to buy some extra newspapers. Just fyi, usually during a holiday (like last weekend) there are no inserts, but the weekend following the holiday there are usually many inserts (like tomorrow).

For the Locals: Purity Plant Tour

This would be a really great place to take the kids to learn something new and see all the cool industrial equipment! The Purity plant in Nashville, TN offers free tours daily five days a week at 10, 11 and 1. The tour is free. However, you have to make an appointment. Here is a great reason to make cranberry juice a staple in your household. This study was primarily aimed at the affects cranberry juice had on UTIs.
