Publix Trips 2-28-09

I have been pretty busy the last few days, but I have found a few minutes to visit Publix to continue my runs on their Italian Sale with the great $5 off of 20 items store coupon. I had a ton of Progresso coupons that were expiring today, so I made it there three times in the last two days. I have combined the trips in the photo. However, I will not go into details as I am just too tired. You can see the coupons for the items in previous posts. There were also Publix coupons in last Sunday's paper which applied to many of these items. This sale runs through Tuesday. I would recommend going to Kroger first and doing the Pillsbury deal to get a $3 catalina that you can use at Publix. Just so you know, the .59 Pillsbury biscuits also produce a catalina and there is a blinkie in that section for .75 off of three Pillsbury items. Thus, buy six and use two blinkies and you are still getting paid to leave Kroger. Here are the Publix trips:

Bargain Meal of the Week 2-26-09


It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I will contribute every Thursday for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

This is true comfort food. My husband loves it!


Shepherd's Pie


Ingredients:
1 prepared package of Idahoan Mashed Potatoes (.50 plus the cost of mi
lk and butter)
1 lb ground beef (1.99)

1 can cream of mushroom soup (1.00)

1/2 cup milk

1 finel
y chopped onion (.50)
chopped clove of garlic (.05)

package of mixed Green Giant Frozen vegetables (1.00)

dash of Worcestershire Sauce

salt to taste


Instructions:

Brown the ground beef with the onion and chopped garlic. While beef is browning, prepare mashed potatoes and microwave frozen vegetables until warm. Turn oven on to 400 degrees. Drain beef mixture. Add Worcestershire sauce, cream of mushroom soup and 1/2 cup of milk. Add mixed vegetables and salt to taste. Put mixture in a deep pie pan or small baking pan and top with mashed potatoes. Cook in oven at 400 until mashed potatoes are slightly browned.


As an addition, you may want to top with cheese ($1.66) but that would increase the price (but oh so yummy!).


Total Price: $5.04
plus a little more for oils and milk. It could be considerably less with coupons. There are coupons available for soup, Green Giant Vegetables, and Idahoan Mashed Potatoes.

They are also having a catalina deal (coupon that spits out when you check out) that when you purchase 5 Pillsbury products you get a $3 catalina for your next purchase. Cold Medicine CVS Coupon

Thanks to I Heart CVS for this coupon. It is $1 off of a $3 purchase of any cold or allergy medicine. Why is this so great? Because CVS frequently has sales or ECB deals that are related to cold medicine. This coupon can be used stacked with a manufacturer coupon. That along with ECBs earned will help to make it free. The coupon is good until 3/20.

For the Locals: Great Giving Opportunity

Frugal in Franklin (a great local blog!) brought this to my attention in her recent post, and I think that this giving opportunity is so important that I want to reprint it here. Please check out her blog, it is full of great all around money saving information, much of it local.

"Can you imagine being a working single mom, with no health insurance, who wakes up on a weekday morning to find that your child has strep throat. You will have to take the day off work, pay for a doctor's visit, and buy all of the necessary medications. A friend tells you about a health clinic with a beautiful facility and caring staff that can help. After the doctor treats your child and hands over your prescription for antibiotics (which you can fill free at Publix), the nurse hands you a bottle of children's Tylenol so that you don't have to buy any.

I don't know about you, but I want in on helping to make that happen. And you can get in on it for free! Siloam Clinic in Nashville is dedicated to providing affordable healthcare. If you would like to know more about what they do, you can visit them here.

Here is an excerpt that I received from their Volunteer Services Coordinator:

Yes…we always have a need for over the counter medications. It is something we give out to patients every single day – cold meds, Advil, Tylenol, aspirin, hydrocortisone cream, monistat 7, etc. Some folks just pick up one thing each grocery visit and drop it off, so any size, any brand, works for us. It would not have to be in bulk.

If you are interested in a list of ideas (in addition to the ones above) for donations, you can check the list here. Donating to Siloam is as simple as putting a container in your linen closet (top shelf if you have little ones) and collecting all that free cough syrup and Bayer aspirin in it. When it gets full, or you are already headed that direction,drop it off at the front desk at Siloam. It's only about a 5-7 minute drive down 65 from Brentwood.

Also, if you are without health insurance, give them a call. There's no reason you can't drop off some of your coupon medicine stash and see the doctor at the same time! Giving and receiving do not have to be mutually exclusive."

Tasty Tuesday: Flourless Chocolate Cake

My coworker brought this in to the office for a birthday celebration. It was chocolaty decadence in its finest so I asked her for the recipe. It originally was in the November 1989 issue of the magazine Bon Appetit. I highly recommend it!

Flourless Chocolate Cake

Ingredients:

Sugar
10 tablespoons (1 1/4 sticks) unsalted butter
1/2 cup sugar
8 ounces semisweet chocolate, chopped
4 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1 tablespoon brandy
4 large eggs, separated, room temperature
1 teaspoon vanilla extract
1/4 teaspoon salt

powdered sugar

Directions:

Preheat oven to 425 degrees. Butter 9-inch-diameter springform pan with 2 1/2-inch-high sides. Coat pan with sugar; tap out excess. melt 10 tablespoons butter with 1/4 cup sugar in heavy medium saucepan over low heat, stirring until sugar dissolves. Add both chocolate and stir until melted. Remove from heat. Mix in brandy.

Whisk yolks in medium bowl until thick and pale yellow, about 4 minutes. Whisk in warm chocolate mixture and vanilla (mixture will be very thick and may appear broken). Using electric mixer, beat whites with salt in large bowl until foamy. Gradually add remaining 1/4 cup sugar, 1 tablespoon at a time and beat until soft peaks form. Whisk 1/3 of whites into chocolate mixture. Gently fold in remaining whites.

Pour batter into prepared pan. Bake until top forms crust but center of cake remains moist and moves when pan is shaken, about 15 minutes (cake will appear undercooked). Let stand in pan overnight (cake will fall as it cools).

Run small sharp knif around cake pan sides to loosen, if necessary. Release pan sides from cake. Sift powdered sugar over. Cut into wedges.

Rite Aid has a $5 off of a $20 purchase printable coupon that expires today. You can make some money with their rebate program plus the $5 coupon. You will have to be willing to have delayed gratification and you must submit your receipts online after you make your purchase in order to get the rebate, though it is really easy. It is really nice getting those checks in the mail! Here's a possible scenario.

Publix Italian Sale Coupon!

I went into Publix last night to pick up some free antibiotics for my son (our house has been afflicted by the yuck going around) and on my way to the pharmacy I noticed this display near the organic section that had an awesome coupon attached. It is $5 off of a purchase of 20 listed items including Progresso, Pillsbury, Muir Glen and Green Giant - all things that I buy and are currently on sale at Publix. If you haven't picked up this great coupon, be sure and get a few (I left a whole stack behind for others). It expires 3/4/09.

Meal #1

Lemon Garlic Shrimp and Pasta

Ingredients:
  • 1 Package Contessa Frozen Cooked Shrimp (currently $3.40 at BOGO Price or $2.64 at BOGO with printable)
  • 1 Package Ronzoni Pasta, 16 oz (.70 BOGO Price)
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 1 tablespoon Italian seasoning
  • 3 fresh garlic cloves, finely chopped (.24 - currently 1.99 per lb)
  • salt
  • fresh coarse ground black pepper or lemon pepper seasoning
  • juice from 1 fresh lemon (.25 - currently 4/$1)
  • zest from 1 lemon (from above)
Directions:
  1. Boil pasta in salted water; remove from heat just before pasta reaches al dente.
  2. Heat skillet on medium; add olive oil & garlic. When heated, add shrimp and butter - cook for 2 minutes and add lemon zest. Gently toss shrimp with garlic until shrimp is heated. Remove from heat.
  3. Drain pasta; return to pan.
  4. Add shrimp mixture (including oils), Italian seasoning, salt and pepper (or lemon pepper seasoning, if you prefer) - to taste.
  5. Toss well with fresh squeezed lemon juice and serve immediately.
Total Cost: $4.59 or $3.83 with coupon, plus a little more for oils and seasoning.

Meal #2

Caribbean Rice and Sausage
This is one of our favorites!

Ingredients:
  • Publix Mild or Hot Italian Pork Sausage (on sale 2.49)
  • Zatarain’s Caribbean Rice Mix (BOGO price $1.00, BOGO with Manufacturer Coupon .75/2 MF Q (RP 2/08) or $1.25/3 MF Q (RP 2/08) would be .58-.62 each)
  • Chopped Red Bell Pepper ($1.00 - on sale $1.99 per lb.)
Directions:
  1. Slice sausage. In a pan, add chopped pepper and sliced sausage and brown. Do not drain.
  2. Add rice mixture and water as described on rice package. The oil from the sausage should be enough that you do not have to add the oil as described on the package (adds to the taste).
  3. Cook rice as instructed from package.
Total cost: $4.49 or $4.11 with coupon

Yummy Recipe: Sourdough Beer Bread

This is a great recipe! I got it from Recipezaar, but it apparently originated on the back of a Red Star yeast package. The nice thing about this recipe is that it does not require a sourdough starter and can be made in a bread machine. I usually make the dough in the machine but finish it in the oven. The loaf had a great texture (firm but not hard) and crust. It does taste like sourdough. We used it the next day to make cinnamon sugar toast and it was probably the best bread we have ever used to make it. I used light Heineken beer.


Sourdough Beer Bread


Ingredients:

* 2 tablespoons vegetable oil
* 1/3 cup water
* 1 cup beer
* 1 1/2 teaspoons salt
* 3 tablespoons sugar
* 3 cups flour
* 1 package dry yeast

Directions:


Place ingredients in bread machine pan in the order suggested by the manufacturer.

Select White Bread setting, and then press Start.


If you prefer to bake it in the oven, put the dough into a large loaf pan after the dough cycle. Let it rise for 30 min in a warm oven, then brush it with egg wash. Bake at 350 until it is golden brown (about 30 minutes).

Sunday: Chicken Lasagna & Potato Rosemary Bread

Stir Fry Ong Choy (Water Spinach)

Description:
My husband, the anti-vegetable person, fell in love with this dish in China on a business trip.

Ingredients:
  • 1 big bundle of Ong-Choy or water spinach (regular spinach can be used if can't find)
  • 2 tbsp of sesame oil
  • 2 glove garlic crushed
STIR FRY SAUCE:
  • 2 tbsp of oyster sauce
  • 1 tbsp of sugar
  • fish sauce to taste
Directions:

Wash and dry Ong-Choy, then cut into long bite size pieces.

In a wok or frying pan, add oil and garlic. Cook until it is golden brown. Add stir-fry sauce and cook for another 2 minutes.

Add ong-choy and stir about 2-3 minutes more or until coated with sauce and wilted. Place on a serving plate. Best serve over Jasmine rice..ENJOY.

Amazing Pictures

Okay, so you have probably already seen this in email form, but I just got it and it was the first time that I saw the pictures. It's pretty amazing. I have not been able to find anywhere online that says this was a hoax, only some difference of opinion of exactly where it occurred.

Look at the picture above and you can see where this driver broke through the guardrail, on the right side of the culvert, where the people are standing on the road, pointing.

The pick-up was traveling about 75 mph from right to left when it crashed through the guardrail.

It flipped end-over-end bounced off and across the culvert outlet, and landed right side up on the left side of the culvert, facing the opposite direction from which the driver was traveling.

The 22-year-old driver and his 18-year-old passenger were unhurt except for minor cuts and bruises.


Now look at the second picture below...




I would say this driver and passenger had a very good day.
