Banana Nutmeg Mini-Muffins Recipe

These make great snacks for the kids! It's also an excellent way to use up those over ripe bananas.

Banana Nutmeg Mini-Muffins

Ingredients:

1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
1/8 teaspoon ground allspice
1 egg
1/2 cup buttermilk
1/2 cup mashed bananas, very ripe
1/3 cup oil

Preparation:

Preheat oven to 400 degrees F. Coat miniature muffin cups with nonstick cooking spray or line with paper baking cups.

In a large bowl, combine the flours, sugar, baking powder, baking soda, nutmeg, salt and allspice. Mix well.

Beat the egg in a small bowl. Add the buttermilk, Banana, and oil. Mix well. Add to the dry ingredients. Stir just until the dry ingredients are moistened.

Divide the batter evenly among the muffin cups, filling each 2/3 full. Bake for 10 to 15 minutes, or until light golden brown and a toothpick inserted in the center comes out clean. Immediately remove muffins from the pan. Serve warm.

Note: I doubled the recipe and filled my tins up to the rim and used five mini-muffin pans with that amount.

For the Locals: Live on the Green!

Live On The Green is a "FREE" 6 week concert series that takes place at Public Square Park near City Hall (Courthouse). The stage is set up on the steps of the Plaza and the crowd gathers in the grassy area of Public Square Park to watch performances from local, regional and national artists. Parking is only $3 in the parking garage located directly under Public Square Park. Food and beverages will be available for purchase each night, as well as VIP Tickets - which include beverages, food and exclusive viewing areas.

Each night will consist of 4 performances with the first starting around 5:30 pm and the Headliner wrapping up around 10:30 pm.

The State of Tennessee's Annual Sales Tax Holiday is held every year on the first Friday in August and ends the following Sunday night. This year's tax-free holiday weekend begins at 12:01 am on Friday, August 5th and ends Sunday, August 7th at 11:59 pm. Tax-free items include clothing priced at $100 or less, school supplies priced at $100 or less, and computers priced at $1,500 or less. An overview of all tax-exempt items may be found HERE.

For the Locals: Mayor’s First Day Festival Aug 7th

Join Mayor Karl Dean for this free community celebration as we welcome the beginning of a new school year with entertainment, educational activities, informational booths, and school supplies. The event will take place at the Bridgestone Arena and doors open at 2:00 p.m. All Metro Nashville Public Schools students are invited to attend. Students must be accompanied by a parent or legal guardian.

Please bring a canned item to the event for the Second Harvest Food Bank. The most needed items are canned meat, peanut butter, canned fruit, macaroni and cheese, canned beans, rice, and cereal.
