Scandinavian Meatballs
Ingredients:
1 1/2 cups plain nonfat or lowfat yogurt, divided
1/2 cup soft bread crumbs
1 pound lean ground beef
2 eggs
1/4 cup finely chopped onion
1 head of parsley finely chopped
1/4 teaspoon salt
1 teaspoon Worcestershire sauce
1 can of turkey or beef gravy
Directions:
Preheat oven to 375 F. In a large bowl combine 1/2 cup yogurt and bread crumbs; let stand 5 minutes. Add ground beef, eggs, onion, 3/4 of the parsley and salt. Mix well and shape into 1 1/4-inch meatballs. Spray baking dish with vegetable cooking spray and place meatballs in pan. Bake meatballs until brown and cooked through, 30-45 minutes.
In a large skillet, combine gravy, 1 cup of yogurt, a pinch of salt, and Worcestershire sauce until smooth. Cook over medium-low heat, stirring constantly. Add meatballs to skillet and cook until just heated through. Garnish with remaining parsley. You may wish to serve with egg noodles.
