Menu Plan Monday 3/29/10

I collect recipes from everywhere. Yet, I seem to keep making the things I know over and over. I think it is because I have such a limited amount of time that I do what is easiest and requires the least amount of thought and preparation. So I am going to gather up all those clipped recipes hiding in corners and actually make a few this week! I have found when I force myself to try something new, sometimes I love it and it becomes a regular.

Monday: Barbecue (Soccer practice)
Tuesday: Chicken and Pineapple Pilaf (recipe below)
Wednesday: Spiced Pork Pot Pie (recipe below)
Thursday: Crockpot Sweet and Spicy Dump Chicken & Steamed Vegetables
Friday: Turkey Burgers and Carrot and Grape Slaw (from Walgreen's Health Coupon Book)
Saturday: Spinach Stuffed Salmon Fillets (from South Beach Cookbook)
Sunday: Eat with family, bake bread to bring

Chicken and Pineapple Pilaf

Ingredients:

1 tsp. vegetable oil
1 cup onion, sliced
2 cups Minute Brown Rice, uncooked
1/2 cup raisins
1/2 tsp. ground ginger
1 can pineapple chunks
1 package (6 oz) cooked chicken, diced
1 cup chicken broth
1/4 cup almonds, sliced
green onions, sliced (optional)

Directions:

Heat oil in large non-stick skillet over medium-high heat. Add onions and saute until tender and transparent. Stir in rice, raisins, ginger, pineapple chunks with juice, chicken and chicken broth. Bring to boil. Reduce heat to low, cover and simmer 5 minutes. Remove from heat and let stand 5 minutes, or until liquid is absorbed. Serve garnished with almonds and green onions if desired.

Spiced Pork Pot Pie
from The Tennessee Magazine

Ingredients:

1 lb ground pork
1 large yellow onion, peeled and chopped
2 garlic cloves, minced
2 carrots, peeled and grated
1 cup green peas
1 celery stalk, finely chopped
1/4 tsp. dried summer savory or thyme
1 tsp salt
1/2 tsp black pepper
4 1/2 Tbsp all-purpose flour
Double-crust pie pastry
1 Tbsp milk

Directions:

In a large skillet over medium heat, combine the pork, onion, garlic, carrots, peas, celery, summer savor or thyme, salt and pepper. Cook 7 to 8 minutes, stirring frequently or until the pork is completely done. Break apart any lumps of meat. Sprinkle the top with the four and cook another 4 minutes or until the juices are thick. Cool 20 minutes.

Meanwhile, place one pastry crust in the bottom of a 9-inch pie plate. Preheat the oven to 425 degrees. When the filling has cooled, spoon into the pastry. Top with remaining pastry, trimming any excess. Press the edges together and crimp as desired.

Brush the pastry top with milk. Cut three steam vents in the top crust with a paring knife. Bake 30 minutes or until golden-grown. Let stand 10 minutes before slicing and serving with chutney.

Bargain Meal of the Week: Apple Gorgonzola Fettucini

It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

I love the flavor of sharp cheese and apples together. Add in some pasta and I am in heaven! So I was very happy to see Gorgonzola cheese on sale this week.

Apple Gorgonzola Fettucini

2 inches dry spinach or regular Fettuccine, cooked according to package directions
4 Tablespoons Butter
1/2 teaspoon minced Garlic
1 medium Apple, sharp and crisp
1/4 cup Walnut pieces
1/3 cup crumbled Gorgonzola
Salt, to taste

Cook fettucini according to package directions. Cut the apple into 1-inch pieces. (Peel first if you like- it's up to you.)

Melt one Tablespoon of butter in a pan, and saute the minced garlic until soft. Add the rest of the butter to the pan, then the walnuts and apples and saute until the apples are just heated through. Be careful that they don't get soggy.

Make sure your noodles are heated (you can run hot water over them if they've gone cold, or perhaps briefly microwave them). Quickly toss the hot noodles together with the sauteed mixture and the crumbled Gorgonzola cheese. Salt to taste.

This was a big time rush trip, as is often the case, but I did make it to pick up my kids with one minute to spare! Fortunately I was pretty organized and did not linger. However, as I was scoping out the check-out staff to decide on the friendliest person, I found myself in the card section. There are $2 off of 3 Hallmark Expression products store coupons plastered everywhere. Well, you know those little cards that you attach to presents (found near wrapping)? They are .79 and those work with this coupon. I am forever looking for those through out the year for the birthday parties my kids attend. The coupon makes them .12 each.

Bargain Meal of the Week 3/19/10

It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

This recipe has been around for a long time. Whenever I pick up cookbooks that date to the 1940's and 1950's there are usually several versions of this recipe in it. It's a great quick recipe and one that kids often like.

Chipped Beef on Toast

Ingredients:

• 1/4 cup butter or margarine

• 3 tablespoons chopped green onion

• 1/4 cup all-purpose flour

• 1 tablespoon Dijon style mustard

• 1/8 teaspoon pepper

• 1 cup milk

• 1 cup water

• 1 teaspoon instant chicken bouillon

• 3 packages (2 oz. each) Buddig Sliced Beef, chopped

• Toasted bread

Directions:

Melt butter in medium size saucepan. Sauté green onion 1 to 2 minutes or until tender. Remove from heat. Stir in flour, mustard and pepper until smooth. Gradually stir in milk and water; add instant bouillon. Bring to boil over medium heat, stirring occasionally. Boil and stir 1 minute or until thickened. Stir in chopped meat; heat through. Serve over slices of toast cut diagonally in half.

Recently I have discovered that I can freeze cheese. Honestly, I don't know why I had not done it before.
