Bargain Meal of the Week 5/20/09
It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every Thursday for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.
This is a great week for sales at Publix. This week Chicken legs are .99 per lb, fresh corn is .25 each and Cole's Garlic Bread is on sale for $1.40 and with this coupon becomes .40 each. This meal should easily come in around $5 - $6. Serve the following recipe with corn on the cob and bread.

We tried this tonight since I wasn't able to be home in the evening to fix dinner. Although my picky daughter didn't like it (what else is new?), the rest of us LOVED it!
I especially like how the sauce used really basic ingredients that I already had on hand.
I added some leftover rolls and frozen veggies with a simple lemon-butter sauce for a complete meal.
