
It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every Thursday for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.
This recipe is under $5 if you use coupons!
Creamy Chicken and Rice Bake
Ingredients:
5 oz of rice, cooked (Mahatma Rice $1.19 ea or .19 with coupon)
1 teaspoon herb and spice seasoning (like Mrs. Dash)
1 pkg. Perdue Short Cuts Chicken Strips (on sale $3.00 or $2.00 with coupon)
1 small onion chopped (.25)
1 can cream of mushroom soup ($1)
1 8 oz container sour cream (Daisy is on sale for .99 or Free with coupon)
1/2 teaspoon pepper
1 can sliced water chestnuts (optional)
1 jar roasted red peppers (optional, also may use fresh)
1 cup shredded cheddar cheese ($1 - Publix Chunk Cheese is on sale 2/$4)
Directions:
Stir together all the ingredients except cheese. Spoon into an 11- x 7-inch baking dish coated with cooking spray. Sprinkle with cheese.
Bake at 350° for 30 minutes or until bubbly around edges.
