Bargain Meal of the Week 4/30/10

It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

This is a great recipe for warmer weather! This recipe calls for chopped grilled chicken breasts, but I think chopped roasted chicken would work just fine.

Chicken Wraps
from Fresh Express

Ingredients:

1/2 pkg Fresh Express Spinach
12 tortillas
4 cups chicken breasts, grilled & chopped
2 cups cheese, grated (any flavor)
Fresh chunky salsa, add to taste

Make the Wraps:

Grill chicken breast, chop it up, set aside.
Microwave or heat tortillas in a hot skillet on stove top.
On a warm tortilla, layer chicken, cheese, and a heap of spinach.
Top it off with salsa.

Serves 6.
