Monday: Lasagna
Tuesday: 40 Clove Garlic Chicken (crockpot) & Mashed Potatoes
Wednesday: Spinach Turkey Meatloaf, Rice & Pumpkin Brownies (Hide the Vegetables Meal)
Thursday: Rockin' Reuben Casserole (recipe below)
Friday: Ho-Bo's
Saturday: Beef and Cabbage Bake & Grandma Iny's Prune Cake
Sunday: Quiche & Pancakes

Rockin' Reuben Casserole

Ingredients:

3/4 lb. shaved deli corned beef
8 oz Swiss cheese
16 oz jar sauerkraut
Thousand Island Dressing

Directions:

Place sauerkraut in four separate ramekins. Lay corned beef on top then cheese and bake at 350 for about 10 mins or until cheese melts. Remove from oven and cool a moment. Top each with 2 TB Thousand Island dressing.
