Bargain Meal of the Week 2/26/10

It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Tuna Ring

Ingredients
16 low fat Pillsbury crescent rolls
1 cup cheese
20 oz drained, 4 cans tuna packed in water
1/4 cup mayonnaise
1/2 tsp garlic powder
1/8 tsp black pepper
Directions
  1. Preheat oven to 350 degrees.

  2. Mix together cheese, drained tuna, mayo, garlic and pepper.

  3. Open crescent roll packages and separate triangles. Place crescent rolls with the point in and the ends overlapping in a circle using a pizza pan. Set the tuna mixture in a ring on the crescent where the ends are overlapping. Then take the little point end and lift it up over mixture and tuck underneath the ring for each crescent roll. It forms a wreath.

  4. Bake for 16 minutes.

Serve with your choice of Green Giant Vegetables.

How Good are the Funds in Your 401k?

In my endeavor to accomplish two New Year's resolutions at one time (mainly use my treadmill and read money management magazines), I came across this great tip.

If you want to know if you have a good fund in your 401k, "go to Morningstar.com. Plug in the fund's name, and site will show that portfolio's percent rank in category. Ideally you'll want to go with a fund that finished in the top 50% of its category over the past five years. This won't guarantee the fund can repeat, but it's at least a sign of sustained solid performance. If you plan lacks choices that accomplish this feat, put your money into the ones that come the closest."

Yummy Spinach Bread!

While I was home due to the recent snow and the kids being out of school, I tried a new bread recipe. Most every parent has a struggle getting their kids to eat green leafy vegetables. Here is a great way to hide some! This bread is very tasty. Actually, I could not taste the spinach in it, only the pepper. The texture is nice and even several days later, the inside is still tender and moist. This is also great for St. Patrick's Day since the bread is green!


Spinach Bread
from Allrecipes.com

Ingredients:

1 cup water
1 tablespoon vegetable oil
1/2 cup frozen chopped spinach, thawed
and drained
3 cups all-purpose flour
1/2 cup shredded Cheddar cheese
1 teaspoon salt
1 tablespoon white sugar
1/2 teaspoon ground black pepper
2 1/2 teaspoons active dry yeast

Directions:

Place all ingredients in bread machine pan in the order recommended by the manufacturer. Select white bread cycle.

(I just used the machine to make the dough and then baked in the oven at 350 for 30-45 minutes.)

Oven Fried Cajun Chicken

Ingredients:

6 leg thigh quarters

1 cup flour
black pepper
garlic powder

Creole seasoning

paprika

cayenne pepper

1/2 cup butter

Directions:

Preheat oven to 425°F.

Pat chicken dry with a clean paper towel and sprinkle with garlic powder and Creole seasoning.

In a Ziploc bag, combine 1 cup flour, 1/4 teaspoon black pepper, a pinch of cayenne pepper (optional - adjust heat as desired), 1/2 teaspoon paprika and 1/2 teaspoon Creole seasoning. Close bag and mix well.

Shake chicken in the bag with flour and seasonings. Line a 9x13 inch glass baking dish with foil. Add butter and place in oven until it sizzles. Place chicken in dish, skin side down.

Bake 30 minutes; turn reduce heat to 325°F degrees and bake 35-45 minutes longer or until chicken is cooked through (this depends upon the weight of the chicken). It will be a beautiful golden brown and very tender when done.

Broccoli and Cauliflower Salad

Ingredients:

1 head broccoli
1 head cauliflower
kraft buttermilk ranch dressing

Directions:
  1. Wash and cut up broccoli and cauliflower.
  2. When well drained, cover with Buttermilk Ranch Dressing.
  3. Refrigerate till cold.
  4. Serve cold.

Harris Teeter Super Doubles Trip 2/17/10

I stopped on my way home for a quick trip. Free Prego could not have come at a better time as I am totally out of pasta sauce.

Here's a little tip about Harris Teeter. When you buy within a family of products, such as Soft Scrub, even if you have the exact coupons for the correct product, often the Harris Teeter system will subtract the coupons from the total sum of the products rather than the individual products. Thus, even though H.T. does not allow overage, it is possible to get overage on one product that applies to another product in the same family, making both free. See the Soft Scrub example below.

Harris Teeter Super Doubles 2/17 - 2/23

Tuna Puttanesca


Ingredients:

* 1 pound penne pasta
* 1 tablespoon extra virgin olive oil (EVOO)
* Two cans tuna packed in olive oil, lightly drained (6 ounces each)
* 4 garlic cloves, chopped
* 1 teaspoon crushed red pepper flakes
* 3 tablespoons capers, drained and chopped
* A handful of kalamata olives, pitted and chopped
* One can diced Italian tomatoes (28 ounces)
* Flat leaf parsley, coarsely chopped (a generous handful)
* Salt

Directions:

Bring a large pot of water to a boil. Salt the water, add the pasta and cook until al dente.

While the pasta is working, heat a deep skillet over medium heat with the EVOO, one turn of the pan. Add the tuna, flaking it with a wooden spoon. Add the garlic and red pepper flakes and cook for 3-4 minutes. Stir in the capers and olives and heat until warmed through, 1 minute. Stir in the tomatoes and parsley, lower the heat a little and simmer for 5 minutes.

Add a ladle of the pasta cooking liquid to the sauce. Drain the pasta, add it to the sauce and toss.



Pork Chops and Applesauce


Ingredients:


2 pkgs. of pork chops
1 bag (or 2 cans) of sauerkraut.
1 jar of applesauce

Directions:

Spread a few spoonfuls of applesauce in bottom of crockpot.

Put a layer of sauerkraut next.

Add 1 layer of pork chops and repeat: applesauce, sauerkraut, pork chops until all pork chops are used and spoon some applesauce & sauerkraut on top of last layer of pork chops.

Cover and cook on low 6-8 hrs. The pork chops are very tender and the smell is wonderful. Enjoy!

Bargain Meal of the Week 2/12/09

It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the Internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every week for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

Occasionally I like to serve breakfast for dinner. The kids love it! Here is a great casserole recipe that works well for either breakfast or dinner. Serve with eggs cooked however you prefer!

Ingredients:
  • 1 lb. Bob Evans Original Recipe Sausage Roll
  • 1 pkg. (20 oz.) Bob Evans Home Fries Diced Potatoes
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1 can (13 oz.) evaporated milk
  • 1/4 teaspoon black pepper
  • 1/3 cup chopped green onions
  • 1/4 cup dried bread crumbs
  • 1 tablespoon. melted butter or margarine
  • 1/2 teaspoon paprika
Instructions:

Preheat oven to 350 F. In medium skillet over medium heat crumble and cook sausage until browned. Transfer to 3-quart casserole dish. Stir in potatoes, milk, green onions, Worcestershire sauce, salt and pepper. Sprinkle with breadcrumbs; drizzle with melted butter. Sprinkle with paprika. Bake uncovered 30 to 35 minutes or until casserole bubbles and top is browned.
