What Bread Looks Like When You Forget Yeast!


I used two bread machines to mix up these batches of bread. They both baked the same amount of time next to each other. I used the same ingredients except I got distracted when putting in the last ingredient. Yeast. OOPS! The no yeast bread I could have used as a paper weight.

Kroger Triples Trip 5/30/09

Since I still had an envelope left of under a $1 coupons left from my Harris Teeter trip, I decided to stop by the Kroger that was tripling their coupons in response to H.T.'s sale. It's a little harder to plan for Kroger's impromptu sale because it is local and not too many people online report on it. I was still able to save 79% and finally reached my $80 goal for the month (if you count the FSA reimbursement which I do!). So no more shopping till Monday! I think I can make it...

Bargain Meal of the Week 5/28/09 - Cheeseburger Bread


It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every Thursday for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

There are not a lot of fantastic deals at Publix this week. However, I just happen to catch a glimpse of the Rachel Ray show this weekend and saw an awesome recipe that I would like to try. It's super easy and uses many ingredients that I have on hand. Check out her site for other great recipes as well.

Here are the current sales that could be used in this recipe:

Ground Chuck, 2.69 per lb
French's Classic Mustard, currently BOGO or free with coupon

Cheeseburger Bread

by Rachel Ray

Ingredients:
  • 2 tablespoons EVOO – Extra Virgin Olive Oil
  • 1 pound ground sirloin
  • 1 medium onion, finely chopped
  • 1 tablespoon chili powder
  • Salt and ground black pepper
  • 1/4 cup yellow mustard
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef stock
  • 1 tube frozen pizza dough, defrosted
  • 2 tablespoons all-purpose flour or cornmeal
  • 1 1/2 cups cheddar cheese, grated
  • 1 egg, beaten with 1 tablespoon water
  • 2 tablespoons sesame seeds
Directions:

Preheat oven to 375°F.

Place large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Add the meat to the pan and cook until golden brown, 5-6 minutes.

Add the onion and chili powder to the pan, season with salt and pepper, and cook until the onion is tender, 4-5 minutes.

Add the mustard, ketchup, Worcestershire sauce and beef stock to the pot, bring up to a bubble and simmer until thickened, 4-5 minutes. Let cool.

Dust your hands and lightly coat the pizza dough with flour or cornmeal before rolling it out onto a work surface. Roll out the dough slightly so it's approximately 11x16".

Top the dough with the cooled meat mixture and top that with the cheese. Leave a one-inch border on each side. Fold all the borders in and over onto an inch of the meat mixture. Roll the dough up into a log shape forming a spiral in the middle.

Brush the roll with egg wash and sprinkle it with sesame seeds. Transfer the roll to a baking sheet and bake until dough is evenly golden brown, about 45 minutes. Let cool slightly.

To serve, slice up the cheeseburger bread and serve with a side of ketchup for dipping.

I Went to the Mall Rant

I generally don't like to complain, but yesterday I went to the mall. For my twenty minutes between work and first child pick-up, I thought I would stop by Dillard's (Cool Springs) and see if they had any dress shirts for my husband on sale. It's after the winter season and by now there should be a good discount. I've done this for many years and can usually find a decent sale. Of course I have not stepped into this store in over a year. I found the sale. At first glance it looked good - 70% off. Then I looked at the price tag. It was $26. That's 70% off? Two years ago, I would pay that for full price for the exact same shirt! And this was all over the men's section. I moved on to the home section.

Our coffee maker is on the blink. It still brews but does not keep the pot hot. I have found some great deals in the kitchen section of Dillard's in the past. Usually there is something there half price or they are selling the display model for next to nothing. Occasionally, I will pay full price if I really love it. The kitchen section was a ghost town. There were much fewer items for sale and they were super expensive. Even the 50% off tiny section was expensive. I moved on.

On my way out, I passed the lingerie section. Men, if you are squeamish about women's lingerie, stop reading here. I had just bought online some beautiful bras that were on clearance and I had a 50% of coupon code that brought them down to about $7 each. Being just curious to see what a department store was selling bras for, I glanced at the first tag I came to. $60. It had to be a mistake. I looked at another. $60. And then another. $80! These were nothing special. A piece of fabric, a piece of lace and a little metal. Really, how much can it cost to produce them? Who buys these things? Certainly no one there because it was empty.

I realize that there are people out there with no children and an abundant income that sees nothing wrong with buying articles of clothing at these prices. I am happy for them. However, they are in the minority. I consider my family as middle class with a good income. We live in a good neighborhood. My children go to a really nice public school for which we moved to the current county so that they might attend. We would have to take a loan out to purchase articles of clothing at what I consider a slightly above average department store. There is an incredible disconnect between manufacturers/department stores and the general public. It is no wonder that Walmart and Family Dollar are seeing a huge surge in customers. It seems to me that the department stores are raising their prices with the belief that people's income is still rising. This is just not happening. Dillard's, if you want to stay in business and actually have shoppers in your store, lower your prices to be reasonable. And for goodness sake, have a real sale.

The Price of Children

My grandmother emailed this to me and I wanted to share...

This is just too good not to pass on to all. Here is something absolutely positive for a change. I have repeatedly seen the breakdown of the cost of raising a child, but this is the first time I have seen the rewards listed this way. It's nice.

The government recently calculated the cost of raising a child from birth to 18 and came up with $160,140.00 for a middle income family. Talk about price shock! That doesn't even touch college tuition.

But $160,140.00 isn't so bad if you break it down. It translates into:

* $171.08 a week.
* A mere $24.24 a day!
* Just over a dollar an hour.

Still, you might think the best financial advice is, "Don't have children if you want to be rich." Actually, it is just the opposite.

You have all the power to heal a boo-boo, scare away the monsters under the bed, patch a broken heart, police a slumber party, ground them forever, and love them without limits, so one day they will, like you, love without counting the cost. That is quite a deal for the price!!

Love and enjoy your children, grandchildren and great-grandchildren!! It's the best investment you'll ever make!!

I stopped by Harris Teeter on my way home today to see if their yogurt prices were still the same as last week (they were) and if they still had a lot of coupon pamphlets attached to the yogurt shelf (they did). These are available at both the local Harris Teeter Stores. As I did not have much time, I grabbed six Dannon All Natural Yogurts and three pamphlets and quickly tore out the coupons. I took them to the self check out, rang them up and handed the three coupons to the cashier in charge of the self checkout. I ended up paying .17 out of pocket. I will never get tired of an easy, fantastic deal!

Bargain Meal of the Week 5/20/09


It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every Thursday for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

This is a great week for sales at Publix. This week Chicken legs are .99 per lb, fresh corn is .25 each and Cole's Garlic Bread is on sale for $1.40 and with this coupon becomes .40 each. This meal should easily come in around $5 - $6. Serve the following recipe with corn on the cob and bread.

Hawaiian Crockpot Drumsticks

Description:
Sweet and savory.

Ingredients:
* 12 chicken drumsticks
* 1 cup ketchup
* 1 cup packed dark brown sugar
* 1/2 cup soy sauce
* grated fresh ginger, 1 tablespoon
* a splash of sesame seed oil


Directions:
Cover and crock on low for about 8 hours.

I do have a few purchases to add. My husband could not take the lack of good coffee creamer so he stocked up (among other purchases). However, I did hand him coupons as he was leaving!

Kroger: 7.61 (to take advantage of the 7 Electrasol coupons I had left and Milk at $1.99 – saved 82%)

Harris Teeter Trip 5/18/09

I had to go to the bank today at lunch and Harris Teeter is just a block away so I stopped in to get some items. It turns out that H.T. has some new rules on coupons (Hillsboro Village location). You can only use two internet coupons for one type product at a time or three manufacturer coupons (I knew the last one but the first is different). According to the manager, you can only use coupons on the first two items in a buy 2 get 3 free (I really don't think this is the case but it was for today). Regardless, it was a great trip! I actually made money.

Description:
After having a challenging week (kid visits to the ER, flooded bathrooms, dripping light fixtures, etc) I wanted something comforting and yummy. I found this recipe and it turned out to be really good!

Ingredients:
2 cans condensed cream of mushroom soup, undiluted
2 cups (16 ounces) sour cream
2 cups mozzarella cheese
5 green onions, sliced
1 package (32 ounces) frozen Southern-style hash brown potatoes, thawed


Directions:
In a large bowl, combine the soup, sour cream, cheese and onions; stir in potatoes until coated.

Transfer to a greased 2 1/2 qt. baking dish. Bake uncovered at 350 degrees for 1 1/2 hours or until potatoes are tender.

Recipe: Blue Cheese Bites

If you still have a few cans of biscuits left over from the great Pillsbury sale at Kroger a few weeks ago, here is a yummy and different recipe to try:

Blue Cheese Bites


Ingredients:


1 pkg. buttermilk biscuits
1/2 c blue cheese, crumbled
1/4 c butter, melted
1/2 tsp. garlic salt

Directions:


Split biscuits in half then cut into quarters.
Place on a non-stick cookie sheet 1 inch apart.
Sprinkle with cheese, butter and garlic salt.
Bake at 400 degrees for 15 minutes.

Pfizer to give free prescriptions to unemployed!

"Pfizer Inc. says it will provide 70 of its most widely prescribed prescription drugs -- including Lipitor and Viagra -- for free to people who have lost their jobs and health insurance.

The world's biggest drugmaker said Thursday it will give away the medicines for up to a year to Americans who lost jobs since Jan. 1 and have been on the Pfizer drug for three months or more.

The announcement comes amid massive job losses caused by the recession and a campaign in Washington to rein in health care costs and extend coverage. The move could earn Pfizer some goodwill in that debate after long being a target of critics of drug industry prices and sales practices.

The program also likely will help keep those patients loyal to Pfizer brands."

Bacon Fried Rice

Ingredients:

1 lb. bacon, fried crisp and drained
2 c. cooked rice
2 carrots
1/2 onion
1/2 head cabbage
2 eggs, beaten
3 tbsp. oil
1 tbsp. sesame seeds
2 tbsp. soy sauce

Directions:

Finely chop carrots, onion and cabbage. In large non-stick frying pan, heat oil on medium high. Brown sesame seeds in oil. Add carrots, onion and cabbage. Do not stir. Fry 5 minutes. Sprinkle with soy sauce and freshly ground pepper. Stir. Push all ingredients to one side of pan. Pour beaten eggs on empty side and scramble. Mix with vegetables. Add bacon and rice. Mix well. Serve.
