My Husband's Favorite Recipe!
This is a man's man's recipe and I like it too!
Mexican Casserole
Ingredients:
1 Chopped Onion
2 lbs of Ground Beef
Cream of Chicken Soup
Cream of Potato Soup
Can of Red Enchilada Sauce
1 Small Can of Chopped Green Chiles
1 Packet of Taco Seasoning
Mushrooms (optional)
Tortillas
Large Bag of Cheese - Sharp Cheddar
Directions:
Heat oven to 375. In frying pan, brown the beef and onion, and drain. Add all other ingredients except Cheese and Tortillas. Simmer to bubbling.
Cut tortillas into bite size pieces. Grease large pan. In layers, place tortillas (sprinkle lightly with water), meat mixture and cheese. Repeat. Cheese should be the last layer added. Bake for 30-45 minutes until cheese is slightly browned.
Number Of Servings: Great for a large family or group.
