Bargain Meal of the Week 3/26/09


It's time for another week of Bargain Meals! Erin over at $5 Dinners (a great read!) is hosting a gathering of bloggers all over the internet, creating frugal meals straight from the sales circulars of their favorite stores. Check it out for even more inspiration. I contribute every Thursday for the current sales at Publix, which run from Wednesday to the following Tuesday. Keep in mind that you do not need to purchase two of a product to get the buy one get one price. Publix marks down their products to half price for the BOGO deals.

This may sound unusual but it works! It makes very tender ribs.

Barbecued Ribs

Ingredients:
  • enough ribs to feed your family (pork spareribs are $1.59 lb)
  • canned Coca-Cola/Pepsi (Pepsi 2 Litters, 1.69 BOGO)
  • barbecue sauce (currently buy brand name get Publix version free)
  • garlic
  • salt and pepper
  • onion powder
Directions:

Place ribs in baking dish and pour soda over the meat until it is covered. Add barbecue sauce and spices.

Marinate over night.

Slow cook the ribs in soda mixture at 200 degrees for at least four hours (longer for more tenderness). Cover the ribs to avoid burning.

Remove the ribs from the oven being careful to prevent meat from falling off the bone.

Place ribs on grill. Brush with barbecue sauce. Add additional seasoning if desired. Grill for ten minutes or until sauce caramelizes.
