Recipe Swap: Cheese Streusel Coffee Cake

The Grocery Cart Challenge is a great site that shows how she feeds her family of six for $60 a week. Every Friday she does this great thing called recipe swap. Here is my recipe.

Cheese Streusel Coffee Cake

Ingredients:

Step 1:

1 1/2 cups of yellow cake mix (save rest for topping)
1 pkg dry yeast
1 c flour
2 eggs
1 c. water

Step 2:

2 (8 oz.) cream cheese
2 eggs
1/4 c. sugar
1 Tbsp. flour
1 Tbsp. lemon juice

Step 3:

Remainder of cake mix
6 Tbsp butter or margarine

Glaze (optional):

1 c. powdered sugar
1 Tbsp. corn syrup
1 Tbsp. water

Directions:
  1. Combine 1 1/2 cups cake mix and other ingredients in Step 1. Beat 2 minutes at medium speed. Spread in a greased 9 X 13 inch pan.
  2. To make cheese filling, blend ingredients in Step 2. Drop by spoonfuls to cover top of batter.
  3. To make topping, cut 6 tablespoons butter or margarine into remaining cake mix (Step 3). Spread over cheese filling.
  4. Bake at 350 for 40 to 45 minutes. If desired, drizzle with glaze when cool.
